When most people think of Juniper Berries, they think gin. However, Juniper has been used In porters, stouts and doppelbocks for centuries as well.
For brewing, use 1/2 - 1 ounce in the boil. The flavor of Juniper works well with flavors such as rye, citrus, ginger, licorice and coriander. For best results crush berries with mortar and pestle before using, or place in thick plastic bag and crush with a mallet. The berries are also delicious in sauces and marinades for game dishes.
Note: Use of juniper is cautioned for pregnant women or anyone with kidney problems.
